VINIFICATION TECHNIQUE
Cold maceration, fermentation under controlled temperature in large wooden barrels (tonneaux).

TASTING NOTES
Colour: Soft golden yellow, brilliant. Nose: Ripe fruit, peach, apricot, balsamic scents of Mediterranean brush, rosemary, vanilla, liquorice root.
Palate: Slightly acid, distinct mineral feel, rich, fat, long lingering finish.


STORAGE
Constant temperature 18 °C, humidity 75%, controlled light, horizontal bottle.

SERVING
Tall, fairly wide goblet, serving temperature 12-15 °C.

MATCHINGS
Seafood dishes, fish, shellfish, throughout the meal.
